"Penguin" Apple Cake* with Mascarpone Cream and Caramel Sauce - Italian raffinesse!

*The "Penguin" Apple cake definitely has no penguin in it! It gets its name from my fundraising for the Yellow Eyed Penguin Trust "I bake for Penguins"
